It’s that time again — the annual season where eating too much is totally cool, and y’all, I am TOTALLY on board with that. I have been binge-eating paleo biscuits with apple butter for a week now, and I’m not even ashamed.

But I do like to keep it a littttle healthy. That’s why these white chocolate cranberry protein cookies are my new favorite dessert for winter.

I am all about cooking with seasonal ingredients when the holidays roll around, and right now, cranberries are my go-to for festive flavor. (After all, the best way to spread Christmas cheer is seasonal ingredients for all to….er, eat.) Now the only thing better than a white Christmas is white chocolate, so I had to throw that in there as well. Delicious ingredients aside, the best part of these cranberry white chocolate cookies is the buttery texture that makes it hard to believe that they’re a guilt-free treat. Just how guilt-free? Think 25 grams of protein and no butter, sugar or flour. HOW CAN THIS BE? Magic, my friends. And a little thing called the coconut that has somehow solved all of life’s problems.

Healthy cooking? Coconut oil. Dry hair? Coconut oil. Cranky husband? Coconut oil. Works every time.

It’s science.

And when you add coconut oil to coconut flour, the stars align, and a perfect little cookie dough is born. Like the kind of cookie dough that necessitates greedily eating straight out of the the bowl and only having enough dough left for three cookies. (Oops.)

Besides how delish these little cranberry cookies are, I also love dump-in-a-bowl recipes where you simply mix it all at once and get to cooking! (Can I get an amen for less dishes?)   1. 1 cup oat flour
  2. 1/4 cup coconut flour
  3. 1 scoop vanilla protein
  4. 2 eggs
  5. 1/4 cup melted coconut oil
  6. 1/3 cup honey
  7. 1/2 cup white chocolate chips
  8. 1/2 cup cranberries

INSTRUCTIONS

  1. Preheat oven to 350.
  2. Combine all the ingredients in a bowl except for the cranberries and white chocolate chips.
  3. Mix well until formed into a thick dough and add in white chocolate chips and cranberries.
  4. Roll into 1-2″ balls and place onto greased cookie sheet, pressing down gently to form a cookie shape.
  5. Bake for 15 minutes and don’t share.
